Meyer Lemon Vinaigrette
Ingredients
  • ½ cup very good quality olive oil
  • ½ cup freshly-squeezed Meyer lemon juice {about 3 lemons}
  • ½ teaspoon Kosher salt
  • ¼ teaspoon freshly ground black pepper
Instructions
  1. Combine all ingredients in a small glass jar with a tight-fitting cover.  Cover the jar, tightly and shake, vigorously, to blend.  Set aside at room temperature until ready to use.  If making the day before, refrigerate and allow to come to room temperature for 2 hours before using.
