Tonight is our first night of Holiday Break.  Michael has been circling the globe with business travel & the kids have been bogged down with exams, final projects & activities…tonight, we wanted to have dinner in the family room, watching Christmas movies.  These sliders & edamame were the perfect finger foods!

For the sliders…the recipe is so easy & the end result is AMAZING!

Start with fresh & finely chopped celery, red onion, garlic & ginger…as well as 3 tablespoons of an asian chile sauce:

Add ground chicken thigh meat & ground pork as well as hoisin sauce, tomatoes…

And fresh lime juice…

For the rolls, I chose fresh Parkerhouse dinner rolls, toasted…

For the edamame…I simply thawed a bag of frozen, organic edamame from Whole Foods and tossed with sea salt & freshly ground black pepper…

Suggestion:  this Asian Sloppy-Joe meat mixture would make an excellent stuffing for lettuce wraps!!

Do you know the movie????  It is one of my favorites!!!  {Answer is at the bottom of this post…but no peeking}.

As I am writing this post, the wind is howling & rain is pouring outside.  Our Black Lab, Duke, is sleeping at my feet.  Michael, Madison, Max, Mallory & Tuffy are all in bed.  The house resonates with the sound of the wind, rain & Christmas carols playing on the stereo.  I am a lucky girl...
