Pork Tacos with Sweet Peach Salsa  |  Roasted Cumin~Lime Carrots

FRIDAY

Risotto with Grilled Sausages, Roasted Peppers & Fennel

We arrived home from the Woodside Spring Horse Trials 2014 last night and, after being gone for 4 days at a horse show, I am currently working my way through mountains of laundry, taking a quick break to post this week’s menu.  We had a great time at Woodside once again this year seeing so many friends, Mallory enjoying her first road trip with her new horse and Maddie’s exciting first run around an Advanced cross country course {you can check out her highlights here} and now it is time to maneuver our way through the last few hectic weeks of school.  Sixteen days until summer vacation!!!

A few notes on this week’s menu:

MONDAY:  Today is Memorial Day and we are kicking off the summer season with Molasses~Mopped Baby Back Ribs, Potato Salad & Kale Apple Coleslaw with Poppy Seed Dressing

TUESDAY:  With spring football practice in full swing, Max arrives home pretty darn hungry and pasta always satisfies him.  This evening’s meatless version…Orecchiette with Roasted Tomato & Basil Sauce…is packed with flavor and it makes good use of the basil, currently quite plentiful in my garden…

WEDNESDAY:  These Prosciutto~Wrapped Chicken Thighs make for an easy weeknight meal and the anchovy-herb butter that is used to baste the meat while roasting is so good!  As far as a side dish, I can’t decide between Charred Green Beans & Scallions  or this Strawberry, Almond & Pea Salad

THURSDAY:  Peaches are popping up in the local markets and tonight they make their way into Pork Tacos with Sweet Peach Salsa served with Roasted Cumin~Lime Carrots {the secret to these summer tacos is in the Homemade Taco Seasoning}…

FRIDAY:  Tonight’s dinner is especially for my boys!  They were such a big help at last week’s horse show and this Risotto with Grilled Sausages, Roasted Peppers & Fennel {one of their all~time favorites} is my way of saying “Thanks!”…
