Sambal Chicken Skewers  |  Cucumber Salad with Yogurt and Mint

Before I dive in to dinner, I wanted to share a couple of  interesting stops I have made on my ongoing travels through cyberspace.  Given my propensity towards spending time in the kitchen, I am always on the lookout for quality products of a culinary nature.  One of my very favorite spots is a little Internet pop-up shop that is open from time-to-time…QUITOKEETO…and it’s proprietress is Heidi Swanson from 101 Cookbooks.  I have purchased several items from QUITOKEETO and I am always impressed with the quality of the products as well as the beauty and care shown in packaging when my treasures arrive.  The shop recently popped open again and these lovely Ambatalia linen dish covers caught my eye…

Unfortunately, I was not quick enough to snatch up a set for myself before they sold out but maybe next time.  I think they would come in handy for dinner preparations and I love using reusable products.  If you get a chance, pop on over to QUITOKEETO and see for yourself their fine collection of specialty items you won’t find in your neighborhood stores.

Well, enough window shopping for now, time to get back to dinner…

These chicken skewers are making a quick reappearance on our dinner menu.  The first time I made these {before our vacation} Michael was traveling out-of-town on business and missed out on one of our favorite meals this summer.  I promised Michael a quick repeat when we returned from Montana and here it is.  This chicken is so easy to make.  The marinade consists of just a few ingredients…

And the chicken, once cut up, can sit in the marinade for a few hours before getting threaded on skewers…

The marinade, once reduced on the stovetop, becomes a sauce that is used to glaze the chicken during grilling…

As I mentioned the first time I blogged about these skewers, they do have a bit of heat on them so I decided to pair the meat with a cool cucumber and mint salad tossed with a creamy yogurt dressing.  The salad was so refreshing and took only a few minutes to come together…

The original recipe called for dried mint but with my mint pot looking like this these days…

I am trying to slip some fresh mint into any recipe I can.  The finished salad is a cool, creamy delight…

Cucumber Salad {slightly adapted from The Baker Chic}

  • 3 seedless {English} cucumbers, quartered and sliced
  • 1 cup plain yogurt
  • 1/4 cup sour cream
  • 2 large cloves of garlic, pushed through a press
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons fresh mint, minced
  • salt and pepper to taste
  1. In a medium-sized bowl, combine all ingredients and toss to combine.
  2. Add salt and pepper to taste.
