Grilled Chicken & Sage Pesto Linguine

OK…a slight change of plans tonight.  I know, I know, the “Menu” called for a different dish {namely a chicken salad with grapes and walnuts & a quinoa-rice side} but, real life happens…

Last night’s grilled chicken {I made extra so as to ensure left overs for a chicken salad} with the pesto was so AMAZING every person in my family begged me to serve it again tonight.  With family reviews like that I certainly won’t disappoint!  Dinner was so easy tonight…all I had to do was make a fresh batch of pesto {I had an extra bunch of sage}, chop up the left-over grilled chicken breasts & boil water for the pasta.  Seriously, this pesto is addictive and everyone cleaned their plates {even Mallory, our picky, non-eater}.   The quinoa & rice salad will make it back on the menu another time.
