A few notes on this week’s menu:

Michael is traveling in Finland for the better part of this week and the children & I are keeping dinners light and summery as we begin this last week of summer vacation.  Michael returns home on Thursday and I believe nothing is as “homey” as a roast chicken dinner.  Friday night we will kick-off the last weekend of vacation with steaks on the grill and a fun variation on the caprese salad.  A champagne or Prosecco cocktail  may make an appearance on Friday evening…we will see.
