A few notes on this week’s menu:

Are you experiencing that overwhelming feeling that often sets in this time of year?  I am…in a big way.  Christmas parties & winter concerts, baking, Christmas lists, the children are consumed with studying for finals and Maddie is also juggling college applications as well as making the final arrangements for her “gap year” experience.  Everything comes to a head this week and then we can indulge in a peaceful holiday and simply enjoy our time together.  Having a high school senior, on the brink of leaving the nest, I believe the gift I will cherish the most this Christmas season {and well into the New Year} is simply our time together as a family, for the months leading up to Maddie’s next great adventure will fly by so quickly.  

This week, when time is running short and the to-do lists are growing long, my dinner menu is anchored with tried & true favorites and my slow~cooker becomes my secret weapon in dodging the “take~out food” bullet.  This trusted kitchen companion will get me through Monday, Tuesday, Wednesday and, quite possibly, Thursday dinners.  Pulling a few ingredients together in the morning, the slow~cooker will quietly work all day while I attend to so many other things and, when we return in the evening, the bulk of dinner preparations will be done and we can enjoy a home~cooked meal.

SUNDAY:  A friend, who recently tried this recipe, reminded me that this Roasted Chicken comes out perfectly…every. single. time.  I am dressing it up for this week’s Sunday dinner with a BEAUTIFUL Jeweled Rice which features pistachios and dried fruits.  Colorful gems of golden raisins, dried cherries, carrots & nuts tinted with green make this rice sparkle like a holiday garland.   A simple salad of Spinach & Citrus makes a perfect complement to both the chicken as well as the rice.

MONDAY:  This Tomato Soup & Grilled Cheese dinner was on our dinner menu last week and is back by popular demand.  This is probably our favorite meatless meal and tonight an easy Kale Salad is served alongside our soup and sandwiches.

TUESDAY:  As I stated in my original post {so long ago that I do not dare include the photo}, this Chicken Teriyaki has got to be one of the easiest dinners I have ever made and it is a family favorite.  Maddie’s last final ends at 6:00pm tonight and then she needs to get home and get ready for a 6:15am flight tomorrow morning to the East coast, heading to her final interview for her “gap year” adventure.  This slow~cooker entrée will make easy work of dinner and allow me to help her pack for an early morning departure.

WEDNESDAY:  As “luck” would have it, Michael has a 6:15am flight to Southern California this morning so he and Maddie are sharing a ride to the airport and then going their separate ways.  Max, Mallory and I will keep busy at home with school, committee meetings, riding lessons and off~season football workouts.  When we return home around 7:00pm a kid {and Mom} favorite of Franks and Beans will be ready to serve, thanks to the slow~cooker{s}.  Fresh baguette slices, with a pat of Irish butter, will complete this fireside dinner after a day that began SO many hours ago. 

THURSDAY:  A classic winter comfort meal is on the menu tonight.  This Pot Roast recipe is from Alice Waters and it is meant to be slow~cooked in the oven…depending on how the week is shaping up at this point, I may try to adapt the recipe for the slow~cooker in order to buy me some time to attend to my “lists”.  A large batch of  Homemade Applesauce was prepared over the weekend and we have been enjoying a bit every morning at breakfast, but tonight the applesauce will be served warm alongside our pot roast and vegetables.

Thursday Dinner Collage

FRIDAY:  Left~over pot roast will be the foundation of this evening’s dinner.  Re~heated meat will be piled on bakery brioche buns that have been dressed with a healthy mayonnaise substitute…Mustard~Horseradish Sauce…and Roasted Potatoes with Garlic will take the place of potato chips alongside this dinner sandwich.  For our greens this evening, I will serve this Kale Salad with a dressing that features, currently  in~season, Meyer lemons.
