A few notes on this week’s menu ~

  1. Sunday ~ I have a definite variation on this theme {minus the brine, keeping the veggies & cooking in the slow-cooker} which I have been using, successfully, for years.  The Spicy Horseradish Cream & the  Malty Guinness Mustard are ESSENTIAL to this dinner.  The Potato Dominoes are new for us & a refreshing change from simple mashed potatoes {although creamy mashed potatoes will always be my ultimate favorite food until the end of time} and they look so impressive on the serving platter.  I usually do not care for the “overly soft” veggies that have been roasted with the corned beef so I provide a potato dish {this year, Potato Dominoes} as well as a green (White-wine spiked Green Peas}, on the side.  As far as the dessert…CHOCOLATE…GUINNESS…SPIKED WHIPPED CREAM…need I say more?
  2. Monday ~ The true beauty of a corned beef dinner is in the sandwiches that follow.  We love these sandwiches, substituting left-over cabbage for the sauerkraut.  Served with Bubbie’s Pickles ~ a San Francisco favorite.  Bubbie’s superior kosher dill pickles can be found at Whole Foods.
  3. Tuesday ~ this simple soup, which utilizes the potato discards from Sunday’s Potato Dominoes, is accompanied by a friend’s, son’,s tasty Irish Soda Bread {I think the magic ingredient is buttermilk}.  Just so you know, Galway’s genes are Ireland, once-removed, so he knows what he is baking about!
  4. Wednesday ~ This simple pasta dish is topped with chopped bacon, peas & fresh herbs…a super fast dinner on the evening of a baseball game.
  5. Thursday ~ My children, are patiently trying to teach me the roads & tracks of Instagram…on this subject they suggested a “Throwback Thursday” night {“Throwback Thursdays are pretty popular on Instagram…my “old” recipes have quite the following!]} here at The Dinner Concierge {where we don’t have a lot of repetition}  & where we highlight a recent favorite.  Sticky Miso Chicken Wings recently generated over 117 emails to my site & the children LOVED them so I will begin “Throwback Thursdays” with that dish…the kids are so happy!
  6. Friday ~ We like to make this soup with pumpernickel croutons {baked in the same fashion as regular Italian Bread croutons}…The red salad is our attempt to punch some color into the last days of winter…{PLEASE give me the greens of Spring & the Reds of Summer}.

Not To Change The Subject, but…you all didn’t hear from me last night {yes, I received over 100 emails asking if I was OK…THANK YOU ALL so very much}!  Last night, Michael was traveling in Southern California and Max had THE 8th Grade Championship Basketball Game here in Marin County, CA.  Well…they lost by 1 point in overtime.  You have to understand that this team has been together since 6th grade and, in the last three years, they have only lost 2 games, winning two Championships along the way.  I am so proud of these boys and last night was REALLY hard for these young men.  Yes, YOUNG MEN…when they started this team, these boys were half the size they are now, with half the spirit.  They have grown so much, in every way, and I am so proud of each and every one of them.  Last night, after the game, we took the boys out for therapeutic milkshakes, fries and burgers.  DISAPPOINTMENT  is so hard to handle but these young men are rising to the occasion…I know each one of them will go on to accomplish great things in their futures.  For now, we celebrate their GREAT achievement over the last three years!

As Far As Tonight’s Dinner, this is what I started with…

At this point, I must be honest…I have NOT had the easiest week.  You probably feel the same!  I hope your weekend treats you well.  As for me, I will be at the computer {wishing I was in the kitchen}…but I will get there soon enough.  You see, I have been approached with an amazing opportunity for this little space known as “The Dinner Concierge”…something I never would have dreamed of but…I am doing it & IT is SO hard!  I look forward to sharing all the details with you soon!  Keep your fingers crossed for the BEST!

In the meantime, I went to pick up Michael from the Ferry tonight and, in his wonderful manner, knowing that I was completely sleep-deprived, etc. from this week, treated me to a glass of champagne and proceeded to order takeout from the restaurant we were at.  I came home and enjoyed my family…no cooking involved.  BTW…the girls and I were up at 4 am this morning to embark on a training session with the horses…WHY do ALL things “horsey” involve getting up hours before sunrise?

So I did not cook this evening, probably a good thing after only two hours of sleep.

Wrapping It Up... I can say that I DO NOT care for this technical aspect of having & growing a food blog…I would rather bury myself in pots & sauces in the kitchen than in Xcode on the Internet.  But, hopefully, one hand helps the other.  All of your words of encouragement {and those lovely eCards} really push me along…SO KEEP THEM COMING!  I AM SO GRATEFUL TO EACH AND EVERY ONE OF YOU!
