A few notes on this week’s menu:

  1. The week begins with the ladies at Canal House…this recipe is from their book, Canal House Cooking, Volume No. 3, Winter & Spring, check it out under “Some of My Favorite Things” on the right side of this page.
  2. Left-over pork from Sunday’s dinner will be sliced and served sandwich style with either garlicky spinach or kale ~ the Garlicky Greens recipe is from Heidi at 101 Cookbooks & it is a family favorite.  Also making another hit of Heidi’s Creamy Miso Dressing for this Monday dinner.  We had this last week as a dressing for a Crunchy Cabbage Salad and it was FABULOUS.  I am going to keep it a bit more on the thick side for this dinner and use it as a dip for the sweet potato fries.
  3. The Thai Grilled-Beef Salad is a new recipe from one of my favorite food bloggers, Ashley @ Not Without Salt.  Can’t wait to give it a try.
  4. Wednesday’s dinner is a repeat performance for us…suffice to say, this dinner was amazing the first time around!  We are looking forward to having it again ~ LOVE the farro salad!
  5. Looks like we may have a dose of winter rain on Thursday so this Beef Goulash will be comfort food most likely enjoyed in front of the fireplace.  I may try and play with the recipe a bit & cook in the slow cooker…we’ll see.
  6. Another new recipe, Quinoa & Kale Crustless Quiche from…I really am loving this site these days & I look forward to trying this quiche.  The  Carrot Soup is a favorite from Deb at Smitten Kitchen.  We might even have the crisped chickpeas this time…if I don’t burn them {remember that one?}!!
