Slow-Roasted Pork with Herbs, Butter-Braised Spring Onions & Creamy Mashed Potatoes

SUNDAY

Slow-Roasted Boneless Pork Shoulder with Herbs & Lemon  |  Butter-Braised Spring Onions with lots of Chives  |  Creamy Mashed Potatoes

What a glorious weekend!  The weather here in Northern California was just about as perfect as you could have imagined.  Cool mornings & evenings but sandwiched in-between was spectacular sunshine & balmy temperatures. We cooked out on the grill {last night} & roasted in the oven tonight.  The beautiful part of tonight’s dinner is that it is LOW MAINTENANCE!  Prep the meat & the herbs…

wrap in plastic wrap until you are ready to cook.  Then, place the roast in a pot and let it go for 8 hours!

Go do some weekend things…hike out at the beach, ride horses at the ranch, hike an island dwelling, practice baseball throwing/catching at the park, plant tomatoes, enjoy opening day of the sailing season on the Bay…or, ALL of the above {like we did this weekend}!

I was planting tomatoes this afternoon…

and the aroma from the cooking pork was tempting me into the kitchen.  Michael & I went on our island hike this afternoon and, as we came within 300 yards of the house, we could smell the meat roasting with all of those glorious herbs!  That is SUNDAY for me…comfort food enjoyed as a family before schedules take over!

The Butter-Braised Spring Onions are SOOO easy…
