Herb-Roasted Pork Subs with Garlicky Spinach | Chunky Applesauce
Having roasted the pork yesterday {sneak a peek at yesterday’s post}, preparation for tonight’s dinner is fairly easy…
First thing to do is remove the cold roast from the refrigerator & thinly slice on our deli slicer…
Let the meat come to room temperature. In the meantime, start the applesauce…
These apple left-overs will make a wonderful treat for our horses…
Peel, core & quarter the apples (I used 8 Honey Crisp apples) and place in a large pot. Add 1-2 tablespoons of water (or apple juice) and simmer over medium-low heat until apples are fork tender. Remove from heat, mash with a wooden spoon and add 2 tablespoons of cinnamon, mixing well. Serve warm or cold.

The pork sandwiches were amazing & I made sure to make a double batch of applesauce…left-overs will be great in the morning with cinnamon granola!
