This morning began with tonight’s dinner {yes, dinner…even before my Sunday morning cup of coffee}.
Herbed Pork Roast…a very, simple preparation that slow-roasts in the oven all day {nine hours!…check back later this evening for my dinner post & the recipe}, leaving you free to do other things on this lovely Sunday afternoon. For me, that meant freshening up some of the garden containers on our deck…
Followed by one of my favorite “winter is almost over” things to do ~preserving Meyer lemons. The season for this beautiful citrus will shortly be coming to a close. Packing some of these beauties into mason jars with heaps of salt & letting them cure will allow you to enjoy their spectacular flavor for months to come! The finished jars will be tucked into a corner on my countertop and sit for a week, shaking every now and then to redistribute their brine. After a week, I will add a bit of olive oil to the jars and place them in my refrigerator. The preserved lemons will be ready to use in a multitude of recipes in about a month…
Now, Michael & I are off for an afternoon hike around the Island with the dogs. How are you enjoying your Sunday afternoon?
