Roast Chickens with Rosemary, Lemon & Honey | Roasted Vegetables | Rosemary, Brown Butter Applesauce
To me, nothing says “Sunday Dinner” like a roast chicken. This recipe yields an incredibly moist bird, packed with flavor {with minimal preparation}…
For the roasted vegetables…
My family {yes, even my kids} LOVES beets & brussel sprouts, so I decided to mix them in a roast…
First, pick your veggies & wash {I picked brussel sprouts, red beets, golden beets & a whole head of garlic cloves…the colors are so beautiful…be sure to peel the beets if you are using them}:
Then chop & toss with a tablespoon or two of olive oil {depending on the amount of veggies} and season to taste with salt & pepper. Pour the veggie mix into a baking dish and roast at 400° for 30 minutes or until the veggies are tender.
As for the Brown Butter Applesauce…
I used (4) Granny Smith Apples & (4) Honey Crisp Apples. Different from the recipe…I peel and chop my apples and when it comes time to add the rosemary, I add whole sprigs which make it easier to remove in the next step. These two adaptations save the straining process {and a lot of time}.

I roasted three chickens tonight to ensure enough meat for tomorrow night’s Chicken & Biscuits…I am already a step ahead of Monday…LOVE that!
On a Family note…our thoroughbred “King” came home yesterday from the hospital after airway-reconstructive surgery this past week! He is doing so well & SOOO happy to be back with Maddie…{Love, Love, Love this photo…thanks, Bev}
