Grilled Chicken Breasts with Sage Pesto | Baked Apples
We first made this dish a couple of months ago & we have been craving it ever since. Normally, I am not a fan of chicken breasts {preferring the thigh} but pounding the breast, brushing it in olive oil, salt & pepper and then grilling…well, what can I say…perfectly moist, tender white meat. Accompanied with a savory pesto & heirloom apples makes for a wonderful meal!
Make the pesto first…
Then the apples…{try and find heirloom varieties…these are Black Arkansas apples}
- 5 heirloom apples for baking {we used Black Arkansas apples}
- 6 tablespoons chopped crystallized ginger
- 5 tablespoons unsalted butter, melted
- 1 tablespoon ground cinnamon
- Peel apples halfway down from stem end. Core apples without cutting through to the bottom. Place in a microwave dish.
- Mix ginger and butter in a small bowl. Spoon ginger mixture into & over each apple. Sprinkle with cinnamon.
- Cover dish loosely with plastic wrap. Microwave on high, about 8 minutes, or until apples are tender. Spoon juices over hot apples and serve with a wedge of lemon.
For the chicken…
Pound each chicken breast, brush with olive oil, salt & pepper and grill.

As I finish typing this post the rain has begun to fall…tomorrow will be very wet. I am so happy that we were able to light a charcoal fire tonight and grill the chicken. The smell of the fire brought us back, temporarily, to summer. The chicken could easily be cooked in a skillet but it is best on the grill.
